Cottonrake is a an independent craft bakery in Glasgow’s West End dedicated to delivering the highest standards in pastry, sourdough bread and speciality coffee. 

At Cottonrake we are currently looking for a Bakery Manager for our small but bustling shop in the heart of the West End of Glasgow.

 

Summary

​

At Cottonrake we are currently looking for a Bakery Manager for our small but bustling shop in the heart of the West End of Glasgow.

This is a full time role, 40hrs/week. Weekend availability is essential.

​

Responsibilities

​

• Ensure daily production targets are met for wholesale, café, and direct sales.

• Monitor quality control and consistency across all baked goods.

• Manage FOH shifts and staff training

• Coordinate closely with the Production Kitchen bakers to align on production needs.

• Track packaging inventory; flag low stock and submit restock requests.

• Ensure all bakery areas meet food safety and hygiene standards.

• Maintain compliance with local health regulations and internal protocols.

• Oversee the cleanliness and organisation of the bakery workspace.

• Communicate production updates and issues to the COO.

• Collaborate with the Café Manager and Head Baker on shared production needs.

• Work with the Chief of Staff on staffing logistics, scheduling, and internal communications.

• Identify opportunities to streamline bakery workflows and reduce waste.

• Support seasonal planning, including holiday production and special items.

• Assist with the execution of large-scale or custom orders as needed.

Requirements​

​

We are looking for an enthusiastic person who is passionate about hospitality, our products and specialty coffee. We work in an especially busy environment and you will need to be able to work in a team at a fast pace, be adaptable, detail orientated, positive and friendly as our community is very important to us.

​

The ideal candidate will be a confident individual with excellent leadership and communication skills, have great coffee experience, be able to stay calm under pressure and problem-solve when required.
